I have had several ask about the Spicy Shrimp Creole recipe….well, it was really the best new recipe we have made. It wasn’t too spicy because I used one can of rotel and one can of diced tomatoes. Also, I think it would be just as tasty with chicken for those who don’t care for shrimp. I highly recommend this recipe. Let me know if you try it!
Since it was cold and rainy today, I emailed Keith and told him it felt like a potato soup day. We usually save the coldest, wettest days in winter for potato soup. I found a new recipe and wanted to try it, so the cold wet weather was welcome today! It was easy to put together and was ready to serve in about an hour. Here is the new recipe:
4 cups chicken broth
4 cups potatoes, peeled and cubed
1/2 cup green onion, chopped
1/2 teaspoon Season All
1/4 teaspoon white pepper, (I didn’t have this so I used regular black pepper)
1/4 teaspoon ground red pepper
1 (8 ounce) package cream cheese, cut into chunks (I used 1 and 1/2)
1/2 pound mild Italian sausage ( we love Italian sausage, so I added more!)
Cook the sausage, drain.
Combine broth, potatoes, onion, and spices.
Boil on medium heat until potatoes are tender.
Smash a few of the potatoes to release their starch for thickening. ( I didn’t do this)
Add the sausage, simmer for about 10 minutes.
Reduce to low heat.
Add cream cheese.
Heat, stirring frequently, until cheese melts.
Serve it up and enjoy!
We put a little bit of cheddar cheese on top of our portion in our bowl. I really like this recipe. I think the sausage really adds to the soup. Hopefully we have one more cold day so you can try it!
