Keith and I are still on our menu plan and try new recipes on a regular basis. Last night I fixed a shrimp salad that was really good, it will be on our fix it again list. I thought I would share it since it’s summer time and salads are quick and easy.
1/4 cup lime juice
2 Tbsp. sesame oil
2 Tbsp reduced sodium soy sauce
1 Tbsp sesame seeds, toasted
1 Tbsp minced fresh mint
1 Tbsp minced fresh cilantro
1/8 tsp. crushed red pepper flakes
1 lb. uncooked, large shrimp, peeled and deveined
1/4 tsp salt
1/4 tsp pepper
1 sweet onion, sliced
1 medium cucumber, peeled and sliced
4 cups torn leaf lettuce
1. In a large bowl combine the first seven ingredients; set aside
2. The recipe calls for grilling of the shrimp on skewers, but I sauteed them in a Tbsp of butter and a Tbsp of olive oil….sprinkle with the salt and pepper
3. Stir the reserved dressing; add the shrimp, cucumber and onion. Toss to coat . Divide lettuce among four salad plates ; top with shrimp mixture and serve immediately.
This recipe was enough for Keith and I to have a full plate with a small portion left over. Unless you are serving something else along with this, it really isn’t enough for 4 servings.
