Enchilada Casserole

1 lb. hamburger
1 pkg corn tortillas ( I got the 24 pack)
1 can ranch style beans
1 can rotel
2 cans cream of chicken soup
8 oz. sliced colby cheese (I used sliced pepper jack)
1 onion, chopped ( I used green onion)

Brown hamburger, drain. Lightly grease bottom and sides of your casserole dish and layer corn tortillas on bottom and up the sides.
Layer the following ingredients on top of tortillas:

hamburger
chopped onion
ranch style beans
sliced cheese

Add another layer of tortillas covering the top. Mix soups, rotel and green chilis together and pour over the top. Cover with foil and bake at 350 for 30 minutes. Uncover and bake 15 minutes more. Let stand for 5 minutes before serving.

You can substitute cooked chicken for the hamburger. I think I will try it with the chicken next time. This was really yummy! We added it to our ‘have it again’ list.
