Homemade Pizza

Keith and I found a pizza recipe about a year ago that we both really enjoy. We try to have it at least once a month. I think I found it in a Cooking for 2 recipe magazine, but don’t remember for sure. Here is the recipe:

1 thin crust Pillsbury pizza dough (in the tube like biscuits)
garlic & oregano pesto (I found this at Walmart)
roasted red peppers (in oil)
fresh mushrooms
mozzarella cheese

I cook the crust for about 5 minutes in a 400 degree oven on my pizza stone to have a crispier crust, but you don’t have to. Then I spread the pesto on the crust, add the roasted red peppers, mushrooms and cheese. Bake as directed for the crust. It is YUMMY!

I made an artichoke marinated salad to go along with our pizza last night. I have never eaten artichokes that weren’t mixed in something else, so I was a little leery. I marinated a can of artichokes (cut into quarters) in a glass bowl with a palm full of oregano, 2 cloves of garlic, red wine vinegar, olive oil and salt and pepper. I made it in the morning and refrigerated it until dinner. We really enjoyed this as a side to our pizza. I recommend it!
